
In 1974 Bill & Barbara Korney moved from Chicago, Illinois to Las Vegas, Nevada with their family. Bill had a passion for hot peppers and a Chicago Italian product called Giardinera, it was something that could not be found anywhere on the entire West Coast. Bill started making his own recipe of Giardinera at home, using a blend of oils and his own Italian seasoning mix.
Bill and Barbara would spend days cutting the vegetables and peppers by hand and mixing the Italian seasonings and oils until the taste was perfect. They soon started jarring the product and started to sell the Giardinera to his friends and other former Chicagoans in the Las Vegas area.
In June 2003 Bill passed away but his recipe was handed down to his sons, and this is how it became named Papa’s Giardinera. Little did Bill know that his homemade recipe would one day become a world-famous product some 36 years later.

In September 2010, one of his sons Tim opened Windy City Beefs N Dogs in Las Vegas, a true Chicago eatery. Tim started making up the recipe once again in his restaurant as his parents did 40 years ago. He is now serving it on his Chicago sandwiches. Customers fell in love with it. With a second Windy City restaurant opening and customers starting to ask to purchase the Papa’s Giardinera to take home, Tim could no longer keep up with the demand, so he went to Chicago, and with his brother Mike, they met with many different manufacturers of Giardinera products, and there they found a manufacturer who could meet their requirements to produce and bottle the Papa’s Giardinera.
Tim and his wife Kathy decided to start a specialty food company called Papa’s Foods Inc, so they could share the world’s best Giardinera products with everyone. And that is the story behind the start of Papa’s Food’s Inc.
